Why Does Storing Dates Properly Matter?

Dates are a high-sugar fruit that keeps relatively well, but poor storage can make them harden, become overly moist, or even grow mould. Basic Rules for Storing Dates

  • Use an airtight container. This prevents exposure to air and moisture that triggers mould.
  • Keep away from humidity and direct sunlight. Store in a cool, dry place, ideally between 5–15 degrees Celsius.
  • Don't wash before storing. Water promotes bacteria and mould growth. Wash only when about to eat.

Special Storage for Wet Dates (Mazafati)

Mazafati is a wet date with 25–30% moisture, so it must be kept chilled. The recommended temperature is around -5 to +5 degrees Celsius. For home use, keep it in the fridge and take it out about three hours before eating for the best texture and flavour. For longer keeping, Mazafati can be frozen.

Tips to Keep Dates Soft

  • If dates start to harden, put them in an airtight container in the fridge; their natural moisture helps soften them again.
  • For Medjool, take it out of the fridge a little before serving so the texture softens.
  • Transfer opened dates into a sealed container; don't leave them exposed to air too long.

Signs Dates Are No Longer Good

Discard dates if you see mould, an unusual sour/fermented smell, or a slimy texture. White sugar crystals on the surface of dried dates are generally normal (not mould), but still check the smell.
